Selection Council for organizations and individuals to implement the city-level S&T task with the project "Research on diversification of processed products from jackfruit (Artocarpus heterophyllus LAM)"
On November 3, 2021, Can Tho City Department of Science and Technology established a Science and Technology Council to select organizations and individuals to carry out the city-level S&T task with the project "Research on diversification of processed products from jackfruit (Artocarpus heterophyllus LAM). The study is carried out by Assoc. Prof. Dr. Bach Long Giang. Nguyen Tat Thanh University, Ho Chi Minh City is a presiding agency.

Overview of the selection meeting
The study was conducted to diversify products made from jackfruit (Artocarpus hererophyllus Lam.) by a closed process including sublimated dried jackfruit, probiotic jackfruit nuggets, jackfruit fiber chips, and cocoa flavored fermented jackfruit powder; at the same time make use of the by-products to develop valuable products, such as organic substrates. On that basis, organize the practical application of process transfer at science and technology units and processing facilities to contribute to sustainable economic development in Can Tho city and the Mekong Delta region.



Council members
The project will conduct the following contents: Analysis of quality components of jackfruit fruit (observational, physical, and chemical characteristics) in Can Tho City and the Mekong Delta; Research on the technological process of sublimation dried jackfruit production; Research on the technological process of producing probiotic jackfruit nuggets from jackfruit pulp; Research the technological process of producing jackfruit fiber chips; Research on the technological process of producing cocoa-flavored fermented jackfruit seed powder; Completing the technological process of producing microbial organic substrates from jackfruit fiber and jackfruit peel; Organize a workshop to announce research results and train on the production process of jackfruit products in Can Tho city.
The Council unanimously approved the project. However, the research team needs to edit and supplement some contents according to the comments of the council members.
