Research on the production process of gluten-free flour from breadfruit and its application in the production of cakes and rice noodle
In the afternoon of March 21, 2025, Can Tho City Department of Science and Technology held a mid-term review meeting of the science and technology project "Research on the production process of gluten-free flour from breadfruit and its application in the production of cakes and rice noodle", presided by Ms. Tran Hoai Phuong. The project is carried out by Dr. Tran Thi Minh Thu, Can Tho University of Technology.

Overview of the meeting
The research focuses on the following contents: market demand, production process of breadfruit powder, processing of breadfruit cakes, rice noodle, and biscuits, and assessing the level of consumer acceptance. So far, the project has completed the first contents and the survey shows that up to 36.4% of consumers have tried these products, at the same time, the market demand is very high (over 70%), showing the great potential of breadfruit products.
During the research, the management board has identified optimal parameters in the processing process, helping to improve product quality. Preliminary tests on making cakes and rice noodle from breadfruit flour have now met initial requirements, opening up the potential for developing new products to meet market demand. In the coming time, the project needs to complete the remaining contents, improve product quality and prepare acceptance procedures according to the plan.
The evaluation council acknowledged the practical value of the project, contributing to diversifying products from breadfruit, creating opportunities for local economic development. However, it requested the research team to speed up the progress, complete the remaining contents early, and complete the procedures for acceptance on time, contributing to promoting the effective application of research results into production practices.
